Notes

This is the cultivated artichoke, derived from the wild Mediterranean species C. cardunculus (q.v.). The young flowering heads are consumed whole (when young, as typically in Italy) or else only the bases of the bracts and the receptacle (when older, as typically in France). Some authors do not distinguish it as a separate species
